Hi everybody! Just a note before I give you the pictoresque run-down of my Pumpkin Strudel recipe. Since I’ve started working full-time again and doing some translating besides that, I hardly have any more time to just try out recipes anymore. But one day I had an idea for this ultra easy Pumpkin Strudel. I used to watch my mom-in-law make these from scratch and the dough is really not easy to make…you have to have a very big working space because the dough for a real Strudel is pulled out very far (about a yard…really!). Well we got so spoiled with all the homemade good food, but none of us have the energy at the end of the day to make one of these real homemade Strudels so I had to come up with another idea. I used ready-made puff pastry for it. Had a bunch of pumpkin on hand and it was a home-run from there!
Gather Pumpkin (fresh, or as in my case, frozen), some apples and grate them:
Wrap grated pumpkin and apple in a clean cloth (cheese cloth) and sqeeze out the juice:
Mix with sugar, cinnamon, raisins..whatever excites your tastebuds:
Spread out super easy dough and spread mixture on top:
(sorry for the bad pic quality, but you get the idea)
Roll it all up and poke a few holes in it with a fork…
(you can make several of these roll-ups for a crowd)
Place in oven and bake about 30 minutes or until golden brown:
A little powdered sugar on top for good measure…
~ Cut into nice little portions ~
~ Nothing left to do now but enjoy! ~
I imagine this would taste mighty good with a big dollop of whipped cream…
Just another way to use up that pumpkin. Let me know how you like it!
